Chicken Salad Variations

Easy Chicken Salad

332 CALORIES: 9G CARBS, 21G FAT, 26G PROTEIN

You will need:

4 OUNCES SHREDDED CHICKEN
6 BABY CARROTS
1 CELERY STALK
2 TABLESPOONS MAYONNAISE
CHIPOTLE SEASONING TO TASTE
SALT AND PEPPER TO TASTE

Directions:

FIRST, MAKE CHIPOTLE MAYO BY MIXING THE CHIPOTLE SEASONING INTO THE MAYONNAISE. STIR UNTIL SPICE IS EVENLY DISTRIBUTED. FINELY CHOP THE CARROTS AND CELERY (OR PUT THEM IN A FOOD PROCESSOR!). LOOSELY CHOP THE CHICKEN AND MIX ALL OF THE INGREDIENTS TOGETHER.

Variations:

  • I usually make this with 2 Tablespoons of hummus instead of mayo. Today I felt like having some chipotle mayo, and happened to be taking pictures, so that’s why you get the mayo version. :-D Using hummus instead of mayo, the recipe is 202 calories: 13g carbs, 5g fat, 27g protein.

  • You can use half an avocado as the binder instead of mayo or hummus, or maybe some guacamole (I’ve done both and they’re delicious.)

  • Use any veggies you want!

  • Add apples and craisins or raisins

  • Serve on a piece of toast, a bed of lettuce, with extra veggies on the side — whatever makes you happy!
