Chicken Salad Variations
Easy Chicken Salad

332 CALORIES: 9G CARBS, 21G FAT, 26G PROTEIN
You will need:
4 OUNCES SHREDDED CHICKEN
6 BABY CARROTS
1 CELERY STALK
2 TABLESPOONS MAYONNAISE
CHIPOTLE SEASONING TO TASTE
SALT AND PEPPER TO TASTE
Directions:
FIRST, MAKE CHIPOTLE MAYO BY MIXING THE CHIPOTLE SEASONING INTO THE MAYONNAISE. STIR UNTIL SPICE IS EVENLY DISTRIBUTED. FINELY CHOP THE CARROTS AND CELERY (OR PUT THEM IN A FOOD PROCESSOR!). LOOSELY CHOP THE CHICKEN AND MIX ALL OF THE INGREDIENTS TOGETHER.
Variations:
I usually make this with 2 Tablespoons of hummus instead of mayo. Today I felt like having some chipotle mayo, and happened to be taking pictures, so that’s why you get the mayo version. :-D Using hummus instead of mayo, the recipe is 202 calories: 13g carbs, 5g fat, 27g protein.
You can use half an avocado as the binder instead of mayo or hummus, or maybe some guacamole (I’ve done both and they’re delicious.)
Use any veggies you want!
Add apples and craisins or raisins
Serve on a piece of toast, a bed of lettuce, with extra veggies on the side — whatever makes you happy!
